Mexican Chicken Fajitas with Sour Cream & Monterey Jack Cheese

    Preheat the oven to 120C.

    Halve and juice the lime(s). Grate the cheese and set aside in the fridge.

    Peel and slice the red onion. Julienne the capsicum. Slice the chicken breast into strips.

    In a large mixing bowl, add the chicken, capsicum and red onion. Season lightly with salt and pepper.

    Add the Worcestershire sauce, olive oil, lime juice and soy sauce to the chicken mixture and stir through.

    Sprinkle the fajita spices over the chicken mixture and stir to combine.

    Heat a frying pan over high heat.

    When the pan is hot, add the chicken fajita mixture into the pan and stir fry until the chicken is cooked through and the vegetables have softened slightly.

    Place the tortillas on a tray in the oven to warm. Divide your warmed tortillas between your serving plates.

    Transfer your chicken fajita mixture onto a large serving plate for sharing and place on the table.

    At the table serve with the yoghurt, cheese, salsa, and tortillas.

An excellent super easy weeknight meal where you toss everything together et voila! I put the chicken mix in the oven instead of frying it in the pan and it was very good.
