    Chop chicken into 1 inch cubes.

    Add 1/2 of the olive oil to a saucepan or large skillet and bring to medium-high heat.

    Mince the garlic.

    Add the chicken to the pan and sear, cooking partially. Approximately 5 mins.

    Reduce heat to simmer for 25-30 minutes until sauce thickens.

    Using a grater, grate the cauliflower to make cauliflower rice.

    Heat the remaining oil in a skillet over medium high heat.

    Finely chop the coriander.

    Add the cauliflower rice to skillet and fry until golden. Approximately 5 mins.

    Remove from heat and serve the curry atop the cauliflower rice.
