    Preheat oven to 190°.

    In a large oven-safe skillet over medium-high heat, heat oil.

    Season chicken generously with salt and pepper. Add chicken to skillet and sear, skin-side down, until golden, 4 to 5 minutes per side.

    Mince the garlic. Finely chop the thyme. Dice the sun-dried tomatoes

    Grate the parmesan cheese

    Transfer chicken to a plate and pour off half the fat from skillet.

    Return skillet to medium heat and add garlic, thyme, and red pepper flakes to taste. Cook until fragrant. Approximately 1 minute

    Stir in stock, cream, sun-dried tomatoes, and Parmesan and season with more salt.

    Bring to a simmer, then return chicken to skillet, skin-side up.

    Transfer skillet to oven and bake until chicken is cooked through. Approximately 17 to 20 minutes.

    In a skillet over medium heat, heat butter.

    Chop the mushrooms into thick slices.

I added baby spinach. Instead of cooking mushrooms separately, I put them in with the chicken before baking in the oven.
