    Preheat the oven to 180C.

    Grate or finely chop the cauliflower.

  • 3.5 min

    Peel and finely chop the brown onion.

    Finely chop the parsley.

    Heat the olive oil in a frying pan over high heat.

    Season the salmon with salt and pepper and place in the frying pan skin-side down until the skin is crisp.

    Turn the salmon and sear until the salmon is coloured.

    Transfer the salmon from the pan to a baking tray.

    Place the salmon into the oven and roast until cooked through (around 10mins).

    Heat the butter in a saucepan over medium-high heat.

    Add the onion and cumin seeds and sautee until the onion has softened.

    Add the cauliflower and continue to sautee until the cauliflower is lightly golden and softened.

    Season the cauliflower rice with salt, pepper and turmeric.

    Stir through the almond slices and raisins.

    Distribute the cauliflower rice among serving plates.

  • 22.0 min

    Remove the salmon from the oven and serve alongside the cauliflower rice.

    Garnish with parsley and serve.
