Caramelised Onion Meatloaf with Swede Mash

Meatloaf should never go amiss from anyone’s cooking repertoire. It’s a simple, no-fuss mid-week meal that takes minimal active cooking time. Paired with delicious swede mash, roasted carrots and sweet balsamic caramelized onions.

    Preheat the oven to 180C.

    Peel the garlic and swede. Finely chop the garlic and chop the swede into small pieces.

    Add the swede to a saucepan, cover with water, season with salt and bring to the boil. Boil the swede until softened and easily pierced with a fork.

    Peel and finely slice the brown onion.

    Peel and cut the carrot(s) into batons.

    On a prepared baking tray, arrange the carrots, drizzle with olive oil, season with salt and pepper and place in the oven to roast.

    In a bowl, mix together the beef mince, mustard, tomato sauce, paprika, dried oregano and garlic. Season well with salt and pepper.

    Using your hands, combine the mince and other ingredients together well and then form into individual meatloaf shapes.

    Remove the carrots from the oven and place the meatloaves on the baking tray.

    Drizzle the meatloaves with olive oil, season well with salt and pepper and then place in the oven to bake.

    In a frying pan, heat the remaining olive oil over medium heat.

    Add the onion to the pan and sautee until softened.

    Continue to cook the onions over a low heat until they begin to change colour to golden-brown and caramelise.

    Stir the balsamic vinegar through the onions to help them caramelise.

    Drain the swede and return to the pan in which they were cooked.

    Mash the swede and season with salt and pepper to taste.

    Distribute the swede mash among serving plates.

    Remove the meatloaves and carrots from the oven. Distribute evenly among serving plates.

    Place the caramelised onions atop the meatloaves and serve.
