Traditional French Ratatouille with Poached Eggs & Rocket

Ratatouille is a classic French dish featuring a medley of perfectly sautéed vegetables, aromatic herbs, and a touch of tangy vinegar. The melt-in-your-mouth vegetables and creamy poached eggs create an explosion of flavour and aromas that will transport.

    Bring a saucepan of water to the boil.

    Peel and chop the brown onion.

  • 2.0 min

    Roughly chop the aubergine, zucchini and red capsicum.

    Peel and finely chop the garlic.

    Slice the fresh basil.

    In a saucepan, heat the olive oil over medium-high heat.

    Add the onion and garlic and sautee until the onion is translucent.

    Add the capsicum, zucchini and aubergine and sautee until tender (5-10 minutes).

    Add the tomato and cook, stirring occassionally, until warmed through.

    Season to taste and stir through the basil.

    Lower the heat and allow to gently simmer (add a splash of water should it become to dry).

    Add the vinegar to the saucepan of boiling water.

    Stir the boiling water carefully to create a gentle circular motion in the water.

    Crack the eggs (individually) into the center of the pan and allow to cook to your liking.

    Distribute the ratatouille among serving bowls.

    Serve the fresh rocket atop the ratatouille.

    Using a slotted spoon, remove the poached egg(s) and serve atop the ratatouille.

  • 25.0 min

    Garnish with fresh cracked black pepper and serve.
