    Chop the aubergine.

    Julienne the red capsicum.

    Finely grate the cauliflower.

    Finely slice the red onion.

    Heat some oil in a pan over medium high heat.

    Add the aubergine and cook until softened and a rich brown colour.

    Add the red onion and red capsicum and continue to cook until all the vegetables are softened.

    In another frying pan, heat some olive oil over medium high heat.

    Season the cauliflower rice with salt and pepper, to taste.

    Stir the chilli garlic sauce, honey and basil through the aubergine.

    Distribute the cauliflower among serving bowls.

At 25 min it doesn’t say which pan to stir in the chili sauce, honey, and basil - I assumed the aubergine pan. Delicious!
