    Preheat the oven to 180C.

    Peel and finely chop the sweet potato into small 2 cm pieces.

    Drizzle with olive oil, season with salt and pepper and place the sweet potato into the oven to cook. Cook until easily pierced with a fork (20-30 minutes).

    Finely chop the almonds.

    Chop the spinach.

    In a bowl mix together the honey and almonds.

    Portion the fish and then season with salt and pepper.

    Top the fish with the honey and almond mixture.

    Place the fish in the oven to bake until the fish is firm and fully cooked (12-15mins).

    Heat the olive oil in a pan over medium heat.

    Add the garlic and cook until fragrant.

    Add the spinach and continue to cook until wilted.

    Pour in half of the cream and stir through the spinach.

    Distribute the spinach on the serving plates.

    Remove the fish from the oven and serve atop the spinach.

    Remove the sweet potato from the oven and add to a large bowl or saucepan.
