Place a saucepan of salted water on to boil.

Cut the beef across the grain into very thin strips approximately 2 inches long.

Chop the garlic, ginger and thinly slice spring onions.

In a small bowl, combine the soy sauce, peanut oil and sugar. Set aside.

Heat the wok or frying pan on medium heat. Add half the olive oil.

When the oil is hot, add the green beans.

Stir-fry until their skins blister and they are tender.

Add the rice to the boiling water.
