Bring a saucepan of salted water to the boil.
Peel and finely chop the ginger and garlic.
Cut the spring onion into 2 cm pieces.
Thinly slice the steak.
Heat the vegetable oil in a saucepan over medium/low heat.
Add the ginger and garlic to the pan and quickly stir fry.
Dip the steak into corn starch to apply a thin layer.
Add the egg noodles to the boiling water and cook until tender (4 mins).
Add the beef to the pan and sauté with the garlic and ginger.
Add the soy sauce and water.
Add the brown sugar and stir to combine.
Drain the noodles and set aside.
Add the spring onions and hoisin sauce and stir fry.
Add the egg noodles and combine.
Serve the Mongolian beef.
