    Preheat the oven to 180C.

    Finely chop the brown onion.

  • 1.5 min

    Peel and slice the garlic.

    Thickly slice the zucchini.

    Thinly slice basil and chop the fresh parsley.

    Heat the oil in a frying pan over medium-high heat.

    Drain the butter beans and rinse.

    Season the bread with salt and pepper and place in the oven to bake until crusty.

    Distribute among serving bowls.

    Top with olives, feta and parsley.

    Remove the crusty, herby bread from the oven and serve warm alongside the Gigantes Plaki.
