    Bring a pan of water to the boil also boil the kettle to make the stock - you will need 500ml of boiling water for each stock cube.

    Chop the portobello mushroom into chunks.

    Thickly slice the mushrooms.

    Julienne the red capsicum.

    Chop the parsley.

    Salt one of the pans of boiling water and add the fettucini (cook for approx. 10 minutes).

    Add the portobello and button mushrooms and cook until soft.
