Bring a pan of well salted water to the boil.

Dice the brown onion.

Finely dice the celery, finely slice the garlic and finely grate the carrot.

Add the spaghetti into the now boiling water and cook until al dente. (around 10-11mins)

Place a frying pan on high heat add the olive oil. Add the onions, celery and garlic to the pan, and cook until they begin to soften.

Add the beef mince to the pan and season with salt and pepper.

Continue to cook the beef until beginning to brown.

Add the finely grated carrot to the beef and stir. Add the tomato paste and chopped tomatoes.

Bring to the boil and then reduce the heat and continue to cook.

Crumble in the beef stock cube and add the oregano and mix well.

Continue to cook over a medium heat until the spaghetti is ready to be served.
