    Preheat oven to 200°.

    Make slits in each chicken breast, being careful not to cut through completely.

    Slice the zucchini, tomato and capsicum and chop into half moons.

    Place chicken breast on baking tray or ovenproof skillet.

    Stuff the chicken slices with the zucchini, tomatoes and capsicum.

    Drizzle with oil and season with Italian seasoning, salt, and pepper.
