Preheat your oven to 180°C (350°F). In a mixing bowl, whisk together the beaten eggs, finely chopped chives, salt, and pepper until well combined.

Heat a non-stick, oven-safe skillet over medium heat. Pour the egg mixture into the skillet, stirring gently for the first few minutes to create a light curd.

Once the eggs begin to set around the edges but are still slightly runny in the center, remove the skillet from the heat. Lay the slices of smoked salmon evenly over the top of the egg mixture.

Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the frittata is fully set and slightly golden on top.
