    Place a pan of salted water on to boil.

  • 0.5 min

    Finely chopped the garlic, shallots and chives.

    Juice the lemon and set aside.

    Trim the end of asparagus.

    Place a frying pan over medium heat and add the olive oil.

    Add the shallots and garlic to the pan and saute until starting to soften (1-2mins)

    Add the asparagus spears to the pan alongside the shallots and garlic. Cook gentle until starting to blister on the outside.

    Add the gnocchi to the boiling water for 2 mins.

    Lower the heat on the frying pan and add the cream, ricotta cheese and lemon juice (1/4 lemon juiced per person).

    Remove the gnocchi from the heat and drain the water.

    Add the gnocchi to the pan with the rest of the ingredients
