    Begin by prepping your vegetables. Chop the aubergine, julienne the red capsicum, finely grate the cauliflower, and thinly slice the red onion.

    In a pan over medium-high heat, add oil and sauté the aubergine until it's softened and achieves a rich brown color.

  • Step 3

    Next, add the red onion and capsicum to the pan, cooking until all the vegetables are tender.

  • Step 4

    In a separate pan, heat some olive oil over medium-high heat. Add the grated cauliflower and sauté until it's golden brown and tender. Season with salt and pepper to taste.

    Returning to your aubergine mixture, stir in the chilli garlic sauce, honey, and basil until well combined.

  • Step 6

    To serve, distribute the cauliflower rice among serving bowls, top it with the chilli aubergine, and enjoy.

At 25 min it doesn’t say which pan to stir in the chili sauce, honey, and basil - I assumed the aubergine pan. Delicious!
