Step 1
Halve and juice the lime. Chop the fish into bite-sized pieces. In a bowl, combine the lime juice, spice mix, and fish. Season well with salt and pepper and mix until coated. Cover and place in the fridge.
-
Step 2
Roughly chop the onion and jalapenos. Finely chop the garlic. Julienne the capsicum. Slice the spring onion on a diagonal.
-
Step 3
Heat some olive oil in a saucepan over medium-high heat. Add the onions and garlic, cooking until they begin to soften.
-
Step 4
Add the capsicum to the saucepan and continue to cook until soft. Add the tinned plum tomatoes, crushing them with the back of a wooden spoon to combine with the onion mixture.
-
Step 5
Stir in the marinated fish and pour in the coconut milk, ensuring it's well mixed.
-
Step 6
Cover the saucepan, lower the heat, and let it simmer for 5-10 minutes, stirring occasionally.
-
Step 7
Roughly chop the coriander and stir it into the stew along with the jalapenos.
-

Distribute the fish stew among serving bowls, garnishing each with spring onion, a dollop of sour cream, and hot sauce to taste. Enjoy your meal!

The food was delicious. Two points though, the recipe picture looks like there should be sweet potato included as well? Also, the recipe does not say what to do with the sour cream? I assumed it was to be put in the food at the end before eating.
