Step 1
Prepare your vegetables and ingredients: finely chop the brown onion, garlic, and celery. Grate the carrot. Set all prepared vegetables aside.

Heat the olive oil in a large frying pan over medium heat. Add the chopped onions, garlic, celery, and grated carrot. Cook until the vegetables are soft, about 5 minutes, stirring occasionally.

Increase the heat to medium-high and add the beef mince to the pan. Cook until browned, breaking up the meat with a spatula, about 5-7 minutes. If the pan is dry, add a splash of water.

Stir in the tomato paste and chopped tomatoes into the pan with the browned mince. Bring to a simmer, reduce heat to low, and cook for 20 minutes, stirring occasionally.

While the sauce simmers, cook the gnocchi according to package instructions until they float to the top of the water, then drain.

Add the cooked gnocchi to the Bolognese sauce, gently mixing to combine. Cook together for an additional 2 minutes to allow the gnocchi to absorb some of the sauce flavors.

Serve the Gnocchi Bolognese hot, topped with grated Parmesan cheese and fresh parsley. Add extra Parmesan shavings if desired.
