    Bring a saucepan of salted water to the boil.

    Preheat the oven to 120C.

    Peel and chop the red onion and garlic. Peel and chop the potato into 1cm cubes. Trim the green beans and cut in half.

    Add the potato to the boiling water and cook until just tender (15min).

    Heat the oil in a large pan.

    Add the onion and cook until softened.

    Add the garlic and stir for 1 minute and cook until aromatic.

    Add in the mince and cook until browned.

    Stir in the curry paste, tomato paste and water.

    Reduce the heat and simmer.

    Drain the potatoes and add to the curry mixture.

    Season well with salt.

    Add the green beans, cover and allow to simmer until the beans and potatoes are cooked through.

    Place the tortillas on a tray and into the oven to warm (2-3mins).

    Remove the tortillas and serve with Bombay potato filling.
