Bring a saucepan of salted water to the boil.

Preheat the oven to 120C.

Peel and chop the red onion and garlic. Peel and chop the potato into 1cm cubes. Trim the green beans and cut in half.

Add the potato to the boiling water and cook until just tender (15min).

Heat the oil in a large pan.

Add the garlic and stir for 1 minute and cook until aromatic.

Drain the potatoes and add to the curry mixture.
