
Vegetable Sausages with Warm Potato Salad

Bring a saucepan of salted water to the boil.

Peel and cube the potato.

Add the potatoes to the water and boil until tender and can be pierced easily with a fork (12-14 mins).

Thinly slice half of the red onion and grate the remaining.

Grate the courgette, carrot and cheese.

Whisk the egg in a shallow bowl.

In a frying pan heat a small amount of oil and add the courgette, carrot and grated red onion and cook until softened.
