    Bring a large pot of water to a boil for the noodles. In a small bowl, combine soy sauce, rice vinegar, peanut butter, brown sugar, tomato ketchup, and honey to make the sauce.

    Add the dried egg noodles to the boiling water and cook for 3-4 mins until al dente. Drain and set aside.

    Heat olive oil (1 tablespoon per person) and some sesame oil in a large skillet or wok over medium-high heat. Add the sliced chicken breast and sauté until nearly cooked through.

    Add julienne carrots, red capsicum, cabbage, and snow peas to the skillet. Stir-fry until vegetables are tender but still crisp.

    Dissolve corn flour in a small amount of water and add to the sauce. Pour the sauce over the chicken in the skillet. Stir until the sauce thickens and the chicken is coated and cooked through.

    Toss the cooked noodles with the chicken and vegetables in the skillet. Mix well to ensure everything is combined and heated through.
