Chinese Vegetable Chow Mein with Stir Fried Egg Noodles

Chow Mein simply means ‘stir-fried noodles’. A quick, delicious and simple dish that can be thrown together in minutes.

    Bring a pan of water to the boil. Also boil the kettle to make the stock - you will need 500ml of boiling water for each stock cube.

    Julienne the carrot and red capscium.

    Peel and cut the ginger into matchsticks.

    Finely chop the garlic.

    Slice the portabello mushroom, red chilli and spring onion.

    In a bowl, mix together the correct amount of stock and chow mein sauce.

    Heat the vegetable oil in a wok or frying pan and heat over medium-high heat.

    Add the noodles to the boiling water and remove from the heat, cook for 3-4 mins.

    Add the green beans, red capsicum and carrot and cook until beginning to soften.

    Add the ginger, red chilli and garlic.

    Add the mushrooms.

    Add the sauce to the vegetables and bring the mixture to the boil.

    Drain the egg noodles.

    Add the bamboo shoots.

    Add the noodles to the wok/frying pan and toss to coat.

    Distribute the chow mein among serving bowls.

    Garnish with spring onion.

    Vegetable Stock

    combine each stock cube with 450-500ml of boiling water. Stir until dissolved. 50ml per person

    Fresh Red Chilli

    sliced Use according to taste

    Spring Onion

    Bamboo Shoots

    Portobello Mushrooms

    sliced

    Garlic

    finely chopped

    Ginger

    chopped

    Vegetable Oil

    1 tablespoon per person
