Bring a saucepan of water to the boil.

Peel and finely chop the garlic and ginger.

Juice the lime and reserve.

Thinly slice the red chilli and and spring onions across a sharp diagonal.

Julienne the carrot and red capsicum.

In a bowl, mix together the soy sauce, brown sugar, ginger and garlic. Season with black pepper.

Thinly slice the steak and add to the marinade. Set aside in the fridge.

Thinly slice the mango.

In a bowl, mix together the fish sauce, lime juice and chilli. Add in the mango and set aside in the fridge.

Remove the boiling water from the heat and add in the rice noodles and cover for around 4 mins.

Heat the olive oil in a wok/pan over high heat.

Take the beef from the fridge and stir fry in the wok until just browned on the outside.

Remove the beef and leave aside on a plate.
