Preheat the oven to 180C.
Finely chop the brown onion.
Peel and slice the garlic.
Thickly slice the zucchini.
Thinly slice basil and chop the fresh parsley.
Heat the oil in a frying pan over medium-high heat.
Add the chicken thighs to the pan, cook for 3 minutes on each side until browned.
Transfer to a plate and set aside.
Add the onion and garlic to the pan and cook for 2 minutes.
Halve the baguette. Drizzle with olive oil and sprinkle with dried basil and oregano.
Add the zucchini to the pan with the onions and cook for another 2 minutes.
Add the tomatoes, water and stock cube.
Season with salt and pepper and leave to simmer.
Add the chicken back to the pan and simmer for another 5-10 minutes to allow the chicken to cook through.
Season the bread with salt and pepper and place in the oven to bake until crusty.
Distribute the saganaki among serving bowls.
Top with olives, feta and parsley.
Remove the crusty, herby bread from the oven and serve warm alongside the saganaki.
