This sweet potato crusted spinach quiche is a fresh, healthy new take on the classic quiche recipe. The sweet potato forms a buttery crust that compliments the savoury spinach and eggs.

Preheat the oven to 180C.
Peel and grate the sweet potato.
In a bowl, whisk together the eggs and cream.
Press the sweet potato around the edges of a pre-greased baking dish.
Lightly brush a small amount of the egg over the sweet potato so it doesn’t burn.
Place the sweet potato into the oven to bake (5mins).
Peel and finely chop the garlic.
Chop the spinach and almonds.
Mix in the spinach, garlic, honey, almonds and blue cheese to the egg mixture.
Season with salt and pepper.
Remove the sweet potato crust from the oven.
Pour in the egg mixture to the center of the baking dish, and place back in the oven.
When the quiche is firm and slightly golden on top, remove from the oven (10-15mins).
Cut slices of the quiche and distribute among serving plates.
Serve rocket alongside the quiche.
