Step 1
Preheat the oven to 180C. Prepare ingredients: remove butter from the fridge and bring to room temperature; chop garlic, parsley, potatoes, and cut broccoli into florets. Mix garlic and parsley into 2/3 of softened butter, season lightly, and form into separate logs. Wrap in cling film/foil and place in the freezer.

Boil potatoes in salted water until easily pierced with a fork (15-20 minutes). Cut a pocket in the thickest part of the chicken breasts, stuff with firmed butter from the freezer, and close the pocket to form a neat parcel. Coat chicken in flour, whisked eggs, and breadcrumbs.

Add broccoli to potatoes during the last few minutes of cooking. Heat oil in a frying pan over high heat and shallow-fry chicken until browned on both sides. Transfer chicken to a baking tray and bake for 10 minutes or until cooked through.

In a separate pan, cook green beans over medium heat until tender and blistered. Season with salt and pepper. Drain potatoes and broccoli, return to the saucepan, and add remaining butter. Mash until relatively smooth, stir in cream, and season with salt and pepper.

To serve, divide mashed potatoes among serving plates, top with chicken kiev, and serve with green beans and lemon slices.
