Hummus makes for a super simple crust in this delicious baked chicken recipe!

Preheat the oven to 180C.
Season the chicken breast with salt and pepper.
Coat the chicken breast in a layer of hummus.
Place the hummus chicken on a baking tray, sprinkle with the paprika and place in the oven until cooked (around 20mins).
Place the couscous in a bowl.
Bring a saucepan of water to the boil. Add the stock and stir to dissolve.
Add the hot vegetable stock to the couscous; cover and set aside.
Remove the cover from the couscous and fluff with a fork.
Stir through the coriander, almond flakes and raisins.
Distribute the couscous among serving plates.
Remove the chicken from the oven and slice.
Distribute the chicken among the serving plates.
Serve garnished with lemon wedges.
